They're not too pretty, but they sure are tasty!
The Jerusalem Artichoke, also known as sunroot or sunchoke, is neither from Jerusalem, nor is it an Artichoke! Go figure! They are actually native to North America and are grown from eastern Canada to northern Florida. The origin of the name is uncertain, but early Pilgrims are said to have named it when they came to the New World, calling it Jerusalem after the 'New Jerusalem' they were creating in the wilderness. The artichoke part comes from the taste of the edible tuber.*

Jerusalem artichokes have 650 mg potassium per 1 cup (150g) serving. They are also high in iron, and contain 10-12% of the US RDA of fiber, niacin, thiamine, phosphorus and copper. The artichoke contains about 10% protein, no oil, and a surprising lack of starch. Jerusalem artichokes have also been promoted as a healthy choice for diabetics, because fructose is better tolerated by people who are diabetic.

The BEST Ever! - Thursday, April 24, 2014I use to chop the artichokes by hand when I was a kid. They had a gallon can with the rim removed on one end and a wooden handle on the other end. I would chop them in a wooden box until they were little pieces.
I have been eating them ever since and they are the Best in the NATION and hope they will be around FOREVER!!
