Go figure! They are actually native to North America and are grown from eastern Canada to northern Florida. The origin of the name is uncertain, but early Pilgrims are said to have named it when they came to the New World, calling it <em>Jerusalem</em> after the 'New Jerusalem' they were creating in the wilderness. The artichoke part comes from the taste of the edible tuber.* Our Jerusalem Artichoke Relish is Sassard's most popular and best-selling product.     I use to chop the artichokes by hand when I was a kid. They had a gallon can with the rim removed on one end and a wooden handle on the other end. I would chop them in a wooden box until they were little pieces.

    I have been eating them ever since and they are the Best in the NATION and hope they will be around FOREVER!!
